This technique gives the optimum atmosphere for all the precious meaty nutrients and flavours to be released. The end result? An aromatic broth, rich in vitamins, minerals, protein and collagen. How to make homemade bone broth 

Creating a flavoursome, homemade bone broth is surprisingly easy. This culinary delight has been cooked up in kitchens around the world for years and you’ll likely have enjoyed it as part of broth-based dishes in restaurants and high end eateries. However, while the cooking process is simple and reasonably low cost, the problem many people face when making homemade bone broth is the length of time it takes. Typically simmering for six hours or more, the cooking process requires a lot of care and patience, plus the effort of sourcing the bones in the first place. It’s for this very reason that Bullshot have created a delicious bone broth in handy, sustainable bottles, allowing you to enjoy all the goodness and flavour of a delicately brewed bone broth, but without the time and hassle. Bullshot bone broths are a pure and natural infusion, simmered with carefully selected vegetables and seasoning to give the ultimate flavour blend with no additives or nasties.

You’ll need:

  • Good quality bones
  • Onions
  • Your choice of vegetables; we recommend carrots, celery and garlic
  • Bay leaves
  • Whole black peppercorns or your own choice of seasoning
  • 2 tbsp of apple cider vinegar (at Bullshot, we opt only to use organic vinegars)

Equipment:

  • A large pan
  • A roasting tin
  • A mesh strainer
  • Sealable jars for storage

     1. Place the bones and vegetablesin a single layer in a roasting tin and cook for 45 minutes in a pre-heated oven at 220C. Gently toss halfway through. (While it’s not essential to roast the bones first, the masters at Bullshot find that doing so helps give the broth a rich, meaty flavor and impressive, deep colour).

    2. Transfer the bones and vegetables into a large pan and add bay leaves, peppercorns and any other herbs and spices you like. Add the apple cider vinegar and cover all the ingredients with cold water to roughly an inch over the top of the bones. Cover with a lid and bring to the boil.

    3. Reduce the heat and simmer on low for between 8-12 hours. Skim any foam or excess fat as needed. Add any additional seasoning to taste.

    4. Strain the liquid through a mesh strainer and leave to cool. Once cold, scoop the fat from the top of the mixture. Store the broth in airtight jars. Homemade bone broth can be stored in the fridge for up to five days.

    Top tips for making bone broth

    • Use a variety of different bones for the ultimate flavour and nutrient boost.
    • Just like the chefs at Bullshot, keep it simple; don’t add too much seasoning or too many different flavours. A simple rich, meaty bone broth offers a stunning base for recipes, and seasoning can be added to each individual recipe at the final cooking stage, creating different flavour-blends to suit each dish.
    • Don’t rush! Cooking bone broth is a lengthy procedure for a very good reason. More time translates to a deeper flavor and an increased amount of nutrients gleaned from the bones.
    • Use more than one pan if needed. Don’t be tempted to cram all your ingredients into one pan. Bones can be large and with vegetables added, the mixture can be too much for one pan alone. It’s important that the bones are fully submerged. Use two or three pans if you need to and simply blend the broths together at the end of the process once the solid ingredients are removed.
    • Try using a slow cooker. This is a great option for cooking up a batch of bone broth and eliminates the need for leaving the hob on all day. Check out this slow cooker recipe from the BBC.

    Which bones to use and where to source them from?

    The most important thing when purchasing bones is to consider where they’ve come from. Here at Bullshot, we only use British, responsibly-sourced bones from our trusted suppliers. In basic terms, the healthier and happier the animals, the more nutrients their bones will produce. Local butchers, farmers or trusted market traders should all be able to supply you with a good selection of high quality bones, plus they’ll have the capacity to cut them to the right size for your pan. For chicken bone broth, you can use the leftover chicken carcass from a roast dinner to create a flavourful, nutrient-filled broth. Turkey bones are a great option too.

    Opt for a good selection of different bones, as each will yield slightly different nutrients. Knuckles, joints, feet and marrowbones are all gelatin-rich and will produce a thick broth full of goodness. Short ribs, shank and oxtail will all add a rich, meaty flavour, and furthermore, roasting them before simmering them will yield a deeper flavour still.
