This silky soup is empowered by our magnificent Chicken Bone Broth that unleashes exquisite taste into the base and is complete with wholesome veg, creamy cheddar cheese, and a delicate sour touch of lemon juice, which helps balance out the overall flavour. Astonishing Asparagus Soup Recipe

Servings: 4-6

Ingredients

2 large bunches of asparagus (around 1kg), bottom ends trimmed

3 tbsp unsalted butter

3 garlic cloves, peeled and crushed

1.5l Bullshot Chicken Bone Broth

Pinch of salt and pepper

2 tbsp fresh lemon juice

100g cheddar, grated

Handful of fresh herbs (such as thyme, dill, or basil), to garnish

Cooking method

  1. Melt the butter in a large saucepan over a medium heat. Add the onions and garlic and let that sweat for around 8 minutes until soft and fragrant. Easy there! Don’t let the onions brown – turn the heat down if necessary.

  2. Cut the tips off half the asparagus and set them aside for later (these will be used to garnish your wonderful creation). Cut the remainder of the asparagus into pieces, roughly ½ inch long.

  3. Once the onion and garlic are smelling divine, add the chopped asparagus to the pot (leaving the reserved tips for later). Next, add the holy grail – your Bullshot Bone Broth, followed by a pinch of salt and pepper. Bring all that goodness to the boil, cover, and simmer for 30 minutes on a low heat until the veggies are tender.

  4. In the meantime, boil a small pot of salted water and add the asparagus tips. Cook for a few minutes until slightly tender but crisp. Drain and place in a bowl of ice water (this stops them from overcooking and helps maintain their bright green colour that will invigorate the finished dish). Once they have cooled down, drain them again and set aside.

  5. Return to the soup and use a hand or stand blender to pulse the soup until completely smooth. If you’re using a stand blender, you may need to do this in batches. Place the puréed soup back on the heat and let it simmer. Next, add the lemon juice and stir in the cheddar cheese. Give it a quick taste and adjust the seasoning if needed. If your soup is too thick, leave it to simmer a little longer or add a splash of Bullshot.

  6. Divide your masterpiece into bowls and top each with the cooked asparagus tips, a sprinkling of cheddar, and your choice of fresh herbs. Dig in!
