Brazen Braised Potatoes Recipe

Ingredients

700g small-medium potatoes (such as baby, new, or la ratte)

250g smoked bacon bits

1 large shallot, thinly sliced

4 garlic cloves

1 large sprig of fresh thyme (plus extra to garnish)

2 bay leaves

3 tbsp extra virgin olive oil

250ml Bullshot Chicken Bone Broth

Pinch of salt and pepper (optional)

Cooking method

  1. Give the spuds a quick rinse and cut any larger ones in half, so that you have a rough mix of whole and halved potatoes.

  2. Place the potatoes in a large pan (big enough so that the spuds can be spread across the bottom in a single layer). Add the sliced shallot, garlic cloves, thyme, bay leaves, and olive oil. Give everything a good mix, making sure the spuds are evenly coated.

  3. Pour in the bone broth. Cover and simmer over a medium heat. Once boiling, reduce the heat to low and cook for 10 minutes.

  4. Turn the potatoes and continue to cook for another 10-12 minutes until the potatoes are cooked and can easily be pierced with a fork or skewer. You should be left with quite a bit of broth at this stage. 

  5. Remove the lid and turn the heat up to high. Once the broth starts to boil, continue to cook until all the liquid has evaporated (give the pan a shake every now and then). At this point, the spuds will start to sizzle.

  6. Add the bacon bits to the potatoes and fry for 5-8 minutes until cooked through and crispy.  

  7. Remove from the heat and discard the bay leaves and any larger pieces of thyme stems. Give the potatoes and bacon a quick taste and season to taste if needed.

  8. Serve straight away whilst piping hot with chopped fresh thyme scattered all over the top.
