We do love a slow cooker here at Bullshot. We know that great quality and incredible flavour take time, so we can’t recommend recipes like this enough. Now, the time has come to put that slow cooker to good use!
If you have a busy day ahead, this recipe is ideal for simply putting delicious ingredients together and leaving them to simmer and magnificently boost in flavour over the hours. With Bullshot as your secret ingredient, this is a fail-proof way of making sure that you get to revel in deep, rich and gloriously infused flavour at dinnertime. If you don’t have a slow cooker to hand, don’t worry - you can still indulge in this hearty meal. Simply use an ovenproof casserole dish and cover it with kitchen foil.
How to garnish your meaty masterpiece
Finishing touches and accompaniments are incredibly important. We love that the cornbread topping in this recipe adds colour and texture to the dish, and the fresh herb garnish and sprinkle of lime juice add fragrance and bring all the bursts of flavour together.
But don’t be shy! We encourage you to be creative with your toppings. Any fresh herbs are small but mighty and will always work wonders in your home cooking. If you despise coriander (many people do!), you could substitute it with some thyme, rosemary or chives, and if you like your chilli extra hot, try sprinkling some fresh red or green chilli pepper on top or adding a pinch of dried chilli flakes to the meat beef more cooking.

Meaty Chilli with Crispy Cornbread Topping Recipe
Ingredients
Servings: 8
- 2kg beef shin, cut into large chunks
- 2 tbsp salt
- 2 tbsp dark brown muscovado sugar
- 2 tbsp smoked paprika
- 1 tbsp cumin
- 1 tsp dried oregano
- 1 tsp ground cinnamon
- 2 red onions, finely sliced
- 8 garlic cloves, peeled and crushed
- 3 tbsp chipotle paste
- 3 tbsp tomato puree
- Bunch of fresh coriander
- 400g tin chopped tomatoes
- 500ml Bullshot Beef Bone Broth
- 400g tin red kidney or black beans
- 250ml black coffee
- 2 tbsp polenta
For the cornbread topping
- 500ml buttermilk
- 225g polenta
- 160g plain flour
- 130g grated cheddar
- Small bunch of coriander, finely chopped
- 1½ tsp baking powder
Method
1. Place the beef into a large bowl and add the salt, sugar, paprika, cumin, oregano and cinnamon. Mix thoroughly, making sure the meat is coated evenly.
2. Place the seasoned beef into a slow cooker, followed by the remaining chilli ingredients (apart from polenta). Give everything a good mix. Cover with a lid and cook on high for 4-5 hours, or low for 7-8 hours. Once ready, the beef should be soft and tender.
Top tip: If you’re baking your chilli, be sure to preheat the oven to 160°C/140°C fan/gas 3 and cook for 5 hours.
3. Using two forks, roughly shred the beef and add the polenta. Mix thoroughly.
4. To make the cornbread topping, combine the buttermilk, polenta, flour, cheddar, coriander, baking powder and a generous pinch of salt in a large bowl. Mix well and set aside for 10 minutes, letting the ingredients soak. Open the slow cooker and, in large dollops, cover the cooked chilli with the cornbread batter, so that it looks like dumplings. Place the lid back on and continue to cook for 45 minutes on high, or 1 hour 15 minutes on low.
Top tip: if you’re using the oven, simply do this step 30 minutes before the end. Then, with 10 minutes to go, remove the foil to let the topping puff and crisp up.
5. Once cooked, serve with an optional side of white rice or tortilla chips, a sprinkle of coriander and a drizzle of lime fresh lime juice.
