BullShot Mexican chicken soup
Cook up a storm with this delicious recipe, which offers a blend of authentic, warm Mexican flavours in a convenient one-pot meal. Serve with crunchy tortilla chips to add bite and texture.
Ingredients
- 2tbsp of olive oil
- 1 onion, chopped
- 4 garlic of cloves, crushed
- 1 dried chilli, deseeded and softened in boiling water
- ½tsp of ground cumin
- 400g tin of chopped tomatoes
- 1½ litres of Bullshot chicken bone broth
- 2 chicken breasts, sliced
- Juice of 2 limes
- Tortilla chips to serve
Method

Heat the oil in a large saucepan. Add the onion and garlic and soften for 5 minutes.

Stir in the chilli, cumin, tomatoes and Bullshot chicken bone broth.

Pour into a food processor and purée until smooth.

Return to the pan then bring to the boil.

Add the chicken, reduce the heat and simmer for 10 minutes until cooked through.

Stir in the lime juice and ladle into bowls.
